Mango Ginger Tarts

A dessert that embodies the sweet taste of summer.



  • 1 cup dates (pitted and soaked for 20 minutes)
  • 1 cup coconut (shredded)


  • 2 sweet ripe mangos
  • zest from 1 organic lime
  • 1 cup Graindrops Mango Ginger
  • 1/2 cup Irish moss gel
  • 2-3 tablespoons coconut oil


  • thin lime wedges


Step 1
For crust, rough blend the ingredients in a food processor. Press coconut and date mixture into a big pie tin or three small ones.
Step 2
For filling, cut the mangos into small pieces and add with the rest of the ingredients to a food processor. Blend until smooth.
Step 3
Pour filling over the crust. Chill in the refrigerator for at least 2 hours.
Step 4
Garnish with thin lime wedges and serve!
