Homemade Irish Moss Gel

A natural raw thickening agent.


  • 8oz Irish moss
  • 1 1/2 cup water (for soaking moss)
  • 1 1/2 cup water (for blending)


Irish Moss gel is an unprocessed seaweed that can be used as a raw thickening agent. Irish moss is found in the rocky parts of the Atlantic coast and in some areas of the Pacific. Irish moss gel can be made and stored for at least a week and is a great way to thicken raw puddings, pies, creams and other desserts.


Step 1
Remove moss from package and rinse until water is clear and seaweed smell is gone. Remove any bits of sand or debris.
Step 2
Place moss in fresh cold water and soak in the refrigerator for 6-12 hours or overnight.
Step 3
Rinse moss thoroughly and place in blender with 1 1/2 cups of cold water. Blend well until a gel is formed. Continue blending if there are still clumps.
Step 4
Once the gel is uniform, place in an airtight container to store or use right away. Gel can be kept refrigerated for 7 days.
